nat. Research in the Department of Brewing and Beverage Technology covers the areas
of raw materials, water, barley and hops, malt production, the process optimization of
wort/beer, wine and other beverages production, with special focus on the sensory
properties. Furthermore, microbiological, environmental, cost-related and analytical
aspects of the brewery are parts of the research.
